Ginger Snaps

2 1/2 cups flour  3/4 maple syrup

1 tsp baking powder  1/4 cup molasses

1 tsp baking soda   1/2 oil

1/2 tsp salt  5 tbsp fresh ginger, grated

Preheat oven to 350 degrees F. In a large bowl, stir together the flour, baking powder, baking soda, and salt. Add the maple syrup, molasses, oil, and ginger. Stir together gently until "just mixed". Scoop spoon-sized portions onto a lightly oiled cookie sheet and bake for 12-15 minutes. Makes about 6-12 small cookies.


Quick, Easy -N- Fast Flourless Peanut Butter Cookies Recipe

1 C. peanut butter
1 C. sugar
1 egg
1 t. baking soda

Cream the peanut butter with the sugar. Stir in the egg and baking soda. Roll into balls. If the dough is
initially too thin to roll let it sit 10 minutes and it will thicken. Bake at 350F. until the edges of the cookies turn golden brown (do not over bake or they will turn hard and crumbly)


Raspberry Chocolate Triangles Recipe

1 1/2 C. flour
3/4 C. sugar
1 C. butter softened
1 package ( 10 oz. ) frozen sweetened raspberries thawed and drained
1/4 C. orange juice
1 T. corn starch
3/4 C. miniature semisweet chocolate chips
vanilla milk chips

Heat oven to 350F. Mix in a medium bowl flour, sugar and butter.

Press in a ungreased 9 x 13 inch pan and bake for 15 minutes. Then mix in a one quart sauce pan drained raspberries, orange juice, and corn starch.

Heat to boiling stirring constantly. Boil and stir one more minute then cool 10 minutes. Sprinkle over crust the chocolate chips and spoon raspberry mixture over the chocolate chips; spread carefully. Bake about 20 minutes or until the raspberry mixture is set. Refrigerate until chocolate is firm.

Drizzle with melted vanilla chips if desired, cut into 3 inch squares. Cut each square into 4 triangles.


No-Bake Brownies

2 C. miniature marshmallows
2 C. chocolate morsels
1 C. chopped pecans
1 C. Pet evaporated milk
1 C. sifted powdered sugar
3 C. fine vanilla wafer crumbs
1/2 t. salt
2 t. evaporated milk

Put chocolate morsels and 1 cup milk into a heavy 1-quart saucepan. Stir over low heat until chocolate melts. Remove from heat.

Mix well in a 3-quart bowl the vanilla wafer crumbs, marshmallows, pecans, powdered sugar and salt. Reserve 1/2 cup chocolate mixture for glaze. Stir rest into crumb mixture. Mix well. Press into greased 9-inch square pan.

Stir 2 tsp. milk into reserved 1/2 cup chocolate mixture and spread evenly over mixture in pan. Chill until glaze is set.

Cut into 36 squares.

1 qt. apples, peeled and cubed
1-1/4 c. brown sugar, packed
   and divided
1/4 c. water

2 t. cinnamon
1 c. all-purpose flour
1 t. salt
1/3 c. butter, melted

Place apples in a buttered 9"x9" baking dish. Add 3/4 cup brown sugar, water and cinnamon. In a mixing bowl, blend together flour, remaining brown sugar, salt and butter to make crumbs. Spread crumbs evenly over apples. Bake at 350 degrees for 50 minutes. Makes 6 to 8 servings
